SOY

Soybeans are a staple ingredient in many cuisines across the globe, and have been for millennia. Yet most of the world’s soy isn’t eaten by humans. The livestock sector uses an estimated 80 percent of global soy as feed for the animals that are raised to produce meat, dairy, eggs and other products. When cultivated for people, soy is a far more efficient use of resources and an excellent source of nutrition and protein.

Soy is a protein-rich legume native to East Asia that is widely grown worldwide thanks to its many uses as an ingredient. Soy is an ancient crop, and botanists believe it was domesticated in central China as early as 7000 B.C. Soy can be used to describe both soybeans and products derived from them, such as soy sauce and soy milk.

Soy is a highly versatile plant that can be processed into many forms, including milk, sauce, tofu, beans and burgers. As a meat and milk substitute, soy can be used in a large number of dishes, making it a valuable staple for anyone reducing or eliminating animal products from their diet.

WHEAT

Global wheat consumption has seen a slight increased over the past year, with over 787.4 million metric tons consumed. This marks an increase from the approximately 783 million metric tons of wheat consumed globally between 2020/2021. Canada is the world’s sixth largest producer and one of the main exporters of wheat, with an average annual production of more than 25 million tonnes with exports of around 15 million tonnes.

Importers of Canadian wheat often mix it with lighter wheats before using it for bread. This is why many efforts are made to maintain the quality and resistance of Canadian wheat. Wheat is a staple food for 35% of the world’s population and is Canada’s largest outdoor crop. Each year, Canada exports wheat to more than 70 countries. Canadian wheat is also used domestically for food, cattle feed and fuel.

STARCH

Starch is very popular in the food industry for its binding, texturizing, thickening, stabilizing and gel binding properties. It is also used in stationery to smooth the irregularities present in the paper and avoid excessive absorption. Thanks to Starch it is possible to manufacture biodegradable bags. In Europe, 8.9 million tonnes of starch and its derivatives are consumed each year.

It is strongly advised to consume starch in the practice of sport. Starch is used in cooking to thicken or bind. It is also used in the manufacture of sweeteners.

The world leader in the corn starch market is North America, this position is explained by the high consumption of processed and instant food products.

The United States is the largest market in North America. Due to the abundance of corn in the country and the low cornstarch prices, they are the main growth drivers for the cornstarch industry in the US market and throughout the country.

POLYMER

The first artificial polymer was developed in the 19th century by Henri Braconnot.
